The story of bacon is set in the late s and early s when most of the important developments in bacon took place.

The Harris Bacon curing operation from Calne was one of the high points of British industrial ingenuity.

The plotline takes place in the s with each character referring to a real person and actual events. Modern people interact with old historical figures with all the historical and cultural bias that goes with this. The matter of Wiltshire curing has over the last few decades become especially important to the United Kingdom. It represents the height of converting nitrate to nitrite before the brine is administered to the meat.

In other words, the brine is fermented which allows for the conversion of nitrate to nitrite through bacteria in the liquid. The brine is retained and re-used multiple times, which now contains the nitrites which speedily cure the meat, while more saltpetre is added to ensure the pool of nitrite is replenished. Of course, the bacteria, as long as they have sufficient food, will continue to exist in the brine to do the conversion of the newly added nitrate to nitrite.
